Great product
My 18 month old son is allergic to dairy and egg and legumes, so we have a hard time finding foods that have the nutrition he needs. I gave him this vegan mac and "chreese" tonight and he LOVED it. And, as a vegan, I thought it was good too. It is not super flavorful, but satisfying none-the-less. I am very pleased with this product and will continue to buy it.

This is a great product. Let me start by saying I'm a vegan and have not consumed cheese in 4 years. But from what I remember of the cheese flavor and texture this is really close. No this does not taste like Kraft mac and cheese, I feel like the taste is more like something you would get at a deli.Contrary to what other reviewers stated, I find the pasta to be my least favorite part of this product. I do have a few tips on making the sauce:1. when mixing it with the milk product really do get all the clumps to dissolve2. when you drain the noodles, leave the burner on the side ON so when you do put the sauce with noodles back on the burner to stir it instantly starts to thicken the sauce3. also I recommend to follow the suggestion on the box to add a tablespoon of butter or a butter substitute to enhance the flavor. Overall, this book is really great, with a couple of exceptions. Before I proceed, though, here are a few tips that might come in useful:1. If your nutritional yeast flakes have a powdery appearance, make sure you use only half the amount called for in any recipe! If a recipe calls for ½ cup of yeast, use only a quarter cup. This is especially important for people who dislike nutritional yeast as much as I do. Don't omit the yeast altogether, because in just the right quantity, it does add an unmistakable "finishing touch" of cheesiness to recipes.2. Recipes that are made up only of plain flour, nutritional yeast, and seasonings generally do not taste like cheese; they taste more like savory gravy. On a similar note, bean-based recipes are going to taste more like hummus than like cheese. That's not necessarily a bad thing if you're prepared for it, of course.3. I find that most of the recipes in this book contain too much lemon juice. Maybe I'm just sensitive to the tartness...

This book is perfectly amazing. It includes UNcheese recipes for "blocks" of cheese that you can use on sandwiches or in other recipes; soups/chowders; fondue recipes; pizzas and casseroles; desserts (UNcheesecake! ). Most of the recipes are quite low in fat (nutritional analyses are included), contrary to what some might believe. Yes, a lot of the "cheeses" use nuts, but many use beans, nutritional yeast, and other amazing ingredients. Recipes are fairly easy to make, uncomplicated, and use easily-obtainable ingredients, for the most part. Some of the "block" cheeses require agar-agar, which is a seaweed derived thickener used in place of "gelatin," and this ingredient can be costly. But otherwise, the recipes are cheap to make, taste great, and are healthy. I had a nonvegan friend of mine try the "colby cheeze." his reaction? Works great but other issues...
Started using this product for my son about a month ago. It's working quite well. He is back to drinking milk as you'd expect with a pre-teen. I do not question the efficacy of this products, however I do have some questions about how this product is delivered and the dosing.The product was purchased through an Amazon 3rd party seller, but the fulfillment was through Amazon. It arrived quickly, and was well packaged. The bottles had a white SKU label placed over the manufacturers label which obscured most of the information (e.g. dosing) provided by the manufacturer. The extra label is not easily removed. This isn't a huge deal, but I'm not a big fan of a manufacturers information being obscured. I don't know if this extra label comes from the reseller or Amazon, but it is unwelcome.My second concern comes from the supplied bottle cap dropper and dosing instructions. one batch didn't work, one batch did
I bought this "Liquid Lactase" as part of a science experiment to show how lactase breaks down milk sugar into glucose and galactose. I added the product to milk and waited more than 24 hours and then I tested the milk with a glucose test strip and a glucose blood meter. I found no evidence of glucose in the milk which suggests the "Liquid Lactase" did not break down the milk sugar (lactose) the way it is supposed to do. I tested a different brand of lactase enzyme from Natures Way and it broke down the milk sugar into glucose very quickly so I know my test works. From my tests, it appears that there is no viable lactase enzyme in this "Liquid Lactase." My bottle was from Lot #8901510. You can do the test yourself on lactase products to see if they really contain lactase. All you need is some Diastix Reagent Strips for Glucose. You can buy them at most drug stores. Annie's makes GREAT gluten free mac & cheese
I have reviewed several gluten free products and this is the best gluten free mac & cheese I have found. I found this at my local health food store, about the only place I shop now that I have to eat gluten free, and loved it. When I saw it on Amazon by the case (and $10 off to boot) I was excited. Annie's also makes frozen, microwaveable mac & cheese that is *very* good...it really just depends on whether you are used to the frozen/baked kind or the kind out of a box. Boxed Mac 'N Cheese
This may not be "Kraft," but in my opinion it is better than the other gluten free mac 'n cheese mixes out there. It isn't terribly appropriate to compare it to a gluten box mix as those who buy this product do so because they CAN'T eat the gluten box mix. I like this product for a fast, tasty gluten free meal- I add coarse ground black pepper and vietnamese hot sauce, sometimes sprinkling chopped tomatoes and/or red peppers on top as a garnish. Of course homemade mac 'n cheese tastes better, but for a night when there's no time to do anything but turn on a burner and wait, this is a great product. (Amy's frozen mac n' cheese is also a winner- but avoid frozen glutino at all costs, yech.)

Yummy for GF if you modify it a bit
I usually let the noodles cook a bit longer, since rice noodles can be kind of tough. I add the two tablespoons of butter (or a bit more), a smidgen more than 1/4 cup milk, and about a 1/2 to 3/4 cup of shredded cheddar cheese. I put some salt and pepper on it and it is much better than the original mix and takes about the same amount of time.I like the idea of adding a bit of spice to it as well and will try that next time.This cannot be compared to the Kraft mix (and I loved that as much as anybody), but if you have to eat gluten free, this is a good substitute when you add some more flavor to it.

A special note if you're looking in the grocery aisle for a new dairy-free cheese to try: when buying dairy-free cheese, make sure the product is labeled Dairy-Free And some vegan cheeses are great in some things but not in others, so I've also listed the ways that I've found each dairy-free cheese to be at its best.

Once you’ve made these blintzes, check out my gluten-free, lactose-friendly version of Grandma Mary’s Noodle Kugel … another Shavuot classic in which you can utilize the remainder of the Sour Cream and Cottage Cheese called for in the blintz... The problem, of course, is that cheese blintzes are a veritable digestive Armageddon for people like me.   All that lactose-rich creamy filling… the flour-based crepe… the dollop of sour cream on top…  I’m getting cramps just thinking about it. It...   The crepe was so spongy, the filling so creamy and sweet… this gluten-free, lactose-free version is not compromised in any way from the original. You can imagine, then, my sheer surprise and delight to discover that making Cheese Blintzes from scratch is fast fast fast.   The last person on earth who made cheese blintzes from scratch, and this is a well-documented fact on Wikipedia, was my Grandma Esther (whose Salmon Croquette recipe you can snag here).   If it contains xanthan gum or guar gum, you can omit the xanthan gum called for in the recipe batter.   The biggest hurdle, as it turned out, was convincing myself that I am indeed the type of person who makes Cheese Blintzes from scratch.   The baking mixes contain chemical leavening agents like baking soda or baking powder and are NOT suitable for this recipe. And once I got cheese blintzes on the brain, I wasn’t able to shake them. Using a large ladle or spoon, place a generous ~¼ cup batter into the center of the hot pan, swirling to coat the bottom of the pan in an even layer, taking care not to spread the batter too thin.

Let go of your beliefs about what lactose free cheese is, and go out and buy some to see for yourself how good it actually is. Some of the most delicious lactose free cheese is made by Galaxy Foods, and their products are widely available in most... Why would you bother substituting lactose free cheese for regular cheese in your recipes if you aren&rsquo.   Lactose free cheese has been tainted with a bad reputation because the first generation of alternative cheeses were nothing like their dairy counterpart, but today&rsquo. t need to give up cheese entirely, but it is definitely worth trying lactose free cheese just so you can see that healthy alternatives can be just as tasty as the real thing. Replacing cheese with lactose free cheese in your meals a few times a week might make you feel a lot better physically.
